Chicken stuffed with Mozzarella and Spinach

Tonight I made a somewhat paleo dinner (minus the cheese), chicken stuffed with mozzarella and spinach.  It is pretty simple to make:

  • Fillet a chicken breast in half
  • Stuff it with spinach and mozzarella.  You can also use other cheeses or veggies like tomatoes
  • Line a baking sheet with some olive oil and cook at 350-400 degrees
PS: be careful with the cheese because it will melt quickly and maybe burn...I almost set off my smoke detector...I think this has to do in part to my ancient oven (see pic below).
